Considering the location of Vista Cay on Universal Blvd., I would guess a taxi to Downtown Disney would be around $20 each way (give or take a couple of dollars) and to Discovery Cove, probably around $15 each way.

If your staying off sight I think it would probably be more convenient to rent a car, IMHO.

...or take the bus for $2 each person, each way (transfers free).
