LAKE BERKLEY RESORT in Kissimmee would seem to fit your requirements. My wife and I have rented a villa on this gated complex twice (2002 and 2005)

There is a good selection of both pool homes and townhouses for rent and there is a fishing lake on site! It is also an easy drive to Lake Toho in Kissimmee center.
